Ingredient Notes and Substitutions
- Corn Syrup - Agave or regular honey may be substituted for the corn syrup.
- Evaporated Milk - You may substitute cream if you prefer. The cream does make a thicker syrup.
Step-by-Step Recipe Instructions
- Measure the white sugar, corn syrup, and water into a medium saucepan (a small saucepan may boil over).
- Bring to a boil over medium-high heat.
- Boil for 4 minutes so the sugar dissolves, and the syrup thickens.
- Remove from the heat.
- Immediately whisk in the vanilla, ground cinnamon, and evaporated milk.
- Serve over pancakes, waffles, French Toast Sticks, or Mini German Pancakes.
- Store in the fridge in an airtight container like a mason jar!
- A mason jar makes this syrup so much easier to reheat!

You could boil the sugar, corn syrup mixture a few minutes longer and lessen the amount of evaporated milk if you want to see if it has the thickness you prefer.

Just in case anyone else would like to know- I mixed 3 teaspoons water, 3 teaspoons cornstarch together in a bowl and added it to the syrup. That gave it a Perfect texture.

I have been making this syrup for 30+ years. Lost the original recipe and thrilled to find it here. Another suggestion for use - Apple pie, vanilla ice cream covered in cinnamon cream syrup.
