Ingredient Notes
- Corn Syrup - agave is a good corn syrup substitute.
- Lemon Juice - must be FRESH!!! Never bottled. You never know how old the bottled kind is, and a lot of the time, the bottled juice doesn't result in a good flavor. It tends to be bland and muted. So you'll want to pick up some fresh lemons!
- Heavy Cream - The heavy cream allows for a creamier, thicker sauce or syrup. If you want one that's much thinner, use evaporated milk or half and half.
- Lemon Extract - A pure extract is what you want here. Don't substitute a flavoring for the extract.
- Lemon Zest? - You can zest the lemon and add the zest to your syrup, but you will need to run the finished syrup through a fine-mesh sieve before serving.
How to Make Lemon Syrup
- In a medium saucepan over medium heat, bring the sugar, corn syrup, and freshly squeezed lemon juice to a boil.
- Boil for 4 minutes so the syrup thickens while the sugar dissolves.
- Whisk constantly to avoid scorching.
- Remove from heat, whisk in the heavy cream, and extract.
- Serve over your favorite pancakes or waffles!
- Store leftovers in the fridge in an airtight container. I like to pour it into glass jars for storage.
- Reheat carefully or in a small saucepan on the stovetop.
