It's that pumpkin season time of year! If pumpkin recipes are your weakness then these delicious pancakes drizzled with cream cheese syrup are for you! These fluffy pancakes embrace that fall flavor you crave! Chocolate chips? Go ahead...toss in a handful. I won't tell.

Ingredient Notes

  • Flour - All purpose flour.
  • Olive Oil - You can substitute vegetable oil, coconut oil, or canola oil for the olive oil.
  • Pumpkin - Be sure you are using canned 100% pumpkin and not the canned pumpkin pie filling. You can use homemade pumpkin puree as well.
  • Pumpkin Pie Spice - Here a recipe to make your own Pumpkin Pie Spice if you need.
Sugar, flour, buttermilk, olive oil, canned pumpkin, baking powder, pumpkin pie spice, baking soda, salt, egg.
Everyday ingredients needed to make this pumpkin pancake recipe!

How to make:

  • Begin preheating an electric griddle to a medium heat.  I usually set mine at about 275 degrees.
  • In a large bowl, whisk together the egg, sugar, olive oil, and buttermilk.
  • Mix in the pumpkin puree.
  • Whisk the baking powder, baking soda, salt, and pumpkin pie spice into the pumpkin mixture.
  • Stir in the flour. 
  • Scoop out by ⅓ cups onto the hot griddle.
  • Cook until golden brown on each side and cooked through.
  • Serve a stack of pancakes with Cream Cheese Syrup!
Whip up this pancake batter and cook on a hot griddle!

FAQs and Expert Tips

What kind of syrup should I use?

I cannot recommend my new Cream Cheese Syrup enough for these pancakes!  It tastes like cheesecake.  Seriously...you have got to try it.  If that's not your thing then both my Cinnamon Cream Syrup or my Pumpkin Pie Syrup would also be great options!

What goes well with these pancakes?

Aside from the regular eggs and bacon, I recommend this Hash Brown Casserole or this Instant Pot Breakfast Casserole. Both can be made the night before and cooked the next morning.
