Everyone loves a good baked potato with sour cream and all the potato toppings, but you don't always have the time to make them. This recipe is a shortcut to enjoying a loaded baked potato in less time! Crispy bacon, melty cheese, and crispy potato bites make a side dish that you won't be able to resist!

Ingredient Notes
- Mrs. Dash - I use the original Mrs. Dash seasoning blend. It's the perfect amount of salty with just the right amount of black pepper.
- Potatoes- Russet potatoes hold up best for this recipe. They get crispy on the outside while soft on the inside and retain the cubed potato shape.
- Bacon - I like smoky bacon. You can substitute pre-cooked bacon pieces or bacon crumbles in a pinch, but the taste is not quite as good.
- Cheese - I generally use Colby jack cheese, but good cheddar cheese is yummy, too!
- Butter - I used salted butter. You could sub half olive oil if you prefer.
Step by Step Instructions
- Preheat oven to 425 degrees.
- Line a baking sheet with foil and spray it with non-stick cooking spray.
- Peel off the potato skins and cut them into small cubes with a sharp knife.
- Put the potato cubes in a bowl and pour the melted butter over them. Stir until all the potato cubes are coated with the butter.
- Dump them onto the prepared baking sheet and lightly season with Mrs. Dash or your seasoning of choice.
- The potatoes should cover the entire baking sheet in a single layer.
- Bake in the preheated oven for 20 to 25 minutes. When done, a fork should be able to pierce the potato cubes easily, and most pieces will have lightly browned edges.
- While the potatoes are cooking, shred the cheese, slice the onions, and cook, drain, and crumble the bacon.
- Sprinkle the roasted potatoes with the grated cheese and bacon. Place back in the oven for a couple of minutes to melt the cheese. Remove from the oven and sprinkle with the thinly sliced green onions.
- Serve and enjoy!
