Why You'll Love This Recipe

  • Goes well with chicken, fish, or steak!
  • Just as tasty as loaded potatoes but faster to make!
  • Makes a quick summer dinner!

Ingredient Notes

  • Mrs. Dash - I use the original Mrs. Dash seasoning blend. It's the perfect amount of salty with just the right amount of black pepper.
  • Potatoes- Russet potatoes hold up best for this recipe. They get crispy on the outside while soft on the inside and retain the cubed potato shape.
  • Bacon - I like smoky bacon. You can substitute pre-cooked bacon pieces or bacon crumbles in a pinch, but the taste is not quite as good.
  • Cheese - I generally use Colby jack cheese, but good cheddar cheese is yummy, too!
  • Butter - I used salted butter. You could sub half olive oil if you prefer.
Ingredients for roasted loaded potatoes.
You'll need a few simple ingredients in addition to large russet potatoes!

Step by Step Instructions

  • Preheat oven to 425 degrees.
  • Line a baking sheet with foil and spray it with non-stick cooking spray.
  • Peel off the potato skins and cut them into small cubes with a sharp knife.
  • Put the potato cubes in a bowl and pour the melted butter over them. Stir until all the potato cubes are coated with the butter.
  • Dump them onto the prepared baking sheet and lightly season with Mrs. Dash or your seasoning of choice.
  • The potatoes should cover the entire baking sheet in a single layer.
  • Bake in the preheated oven for 20 to 25 minutes. When done, a fork should be able to pierce the potato cubes easily, and most pieces will have lightly browned edges.
  • While the potatoes are cooking, shred the cheese, slice the onions, and cook, drain, and crumble the bacon.

  • Sprinkle the roasted potatoes with the grated cheese and bacon. Place back in the oven for a couple of minutes to melt the cheese. Remove from the oven and sprinkle with the thinly sliced green onions.
  • Serve and enjoy!
