Everyone love a good baked potato with sour cream and all the potato toppings but you don't always have the time to make them. This recipe is a shortcut to enjoying a loaded baked potato in less time! Crispy bacon, melty cheese and crispy potato bites make a side dish that you won't be able to resist!

Ingredient Notes

  • Mrs. Dash - I use the original Mrs. Dash seasoning blend. It's the perfect amount of salty with just the right amount of black pepper.
  • Potatoes- Russet potatoes hold up best for this recipe. They get crispy on the outside while soft on the inside and retain the cubed potato shape.
  • Bacon - I like smoky bacon. You can substitute pre-cooked bacon pieces or bacon crumbles in a pinch but the taste it's quite as good.
  • Cheese - I generally use colby jack cheese but a good cheddar cheese is yummy too!
  • Butter - I used salted butter. You could sub half olive oil if you prefer.

You'll need a few simple ingredients in a addition to large russet potatoes!

Step by Step Instructions

  • Pre heat oven to 425 degrees.
  • Line a baking sheet with foil and spray it with non-stick cooking spray.
  • Peel off the potato skins and cut them into small cubes with a sharp knife.
  • Put the potato cubes in a bowl and pour the melted butter over them. Stir until all the potato cubes are coated with the butter.
  • Dump them onto the prepared baking sheet and lightly season with Mrs. Dash or your seasoning of choice.
  • The potatoes should cover the entire baking sheet in a single layer.
  • Bake in the preheated oven for 20 to 25 minutes. When done a fork should be able to easily pierce the potato cubes and most pieces will have lightly browned edges.
  • While the potatoes are cooking, shred the cheese, slice the onions and cook, drain, and crumble the bacon.

Toss potato cubes with butter and season!
  • Sprinkle the roasted potatoes with the grated cheese and bacon. Place back in the oven for a couple of minutes to melt the cheese. Remove from the oven and sprinkle with the thinly sliced green onions.
  • Serve and enjoy!

What can I serve these with loaded potatoes?

I have a few great options here for you.  If you're looking to serve these potatoes as a side dish to a meat then check out this Lemon Roasted Chicken or Garlic Rosemary Buttered Steak.  Perhaps you're more of a fish person.  If so this Baked Salmon would be great!  For a lighter meal try them with something like a Layered Green Salad!

    I'm a huge potato fan, I pretty much love any recipe with potatoes, my husband is the opposite and dislikes pretty much any recipe with potatoes.
