The obsession with Crumbl cookies continues! This copycat recipe is a combination of the best oatmeal cookies, rich chocolate chips, those addictive Rolo candies, and caramel sauce drizzled over the tops!

Ingredient Notes and Substitutions
- Chocolate Chips - These must be the Ghirardelli brand specifically. They have a slightly different flavor than regular milk chocolate chips. You can sub regular ones if you want, but the taste isn't quite the same.
- Rolos - If you're having trouble finding Rolos (I seriously did), you can substitute the caramel-filled Hershey kisses instead. They are stickier but will work.
- Butter - I used salted butter. If using unsalted butter, add an additional ยฝ teaspoon of Salt to the recipe.
- Flour - All-purpose flour, never self-rising flour.
- Oatmeal - This recipe uses quick-cooking oatmeal. This is not instant oatmeal. If all you have are rolled oats or old-fashioned oatmeal, then you can pulse them in a food processor or blender until they are small, like quick oats.

How to Make
- Preheat oven to 350 degrees.
- Line baking sheets with parchment paper.
- Cut the Rolos in half and set them aside.
- In a large mixing bowl or the bowl of a stand mixer, cream the butter with the brown sugar.
- Add the eggs and vanilla extract mixing well at a medium speed.
- Add the baking powder, salt and the oatmeal. Mix well.
- Add half the flour.
- Add the chocolate chips.
- Add the last half of the flour, mixing well.
- Scoop the cookie dough with a #40 cookie scoop in heaping scoops onto a prepared baking sheet for smaller cookies.
- You should get 12 to a pan.
- For large cookies, scoop the dough out by โ cupfuls and place 6 of this size cookie ball on the prepared baking sheet.
- With lightly floured hands, roll each dough glob into a ball. The small cookie dough balls should be slightly bigger than a golf ball. The large ones are baseball-sized.
- Bake cookies at 350 degrees.
- Small cookies 10 minutes, remove from oven and light press 3 Rolo halves on the tops. Return to the oven for 2 minutes.
- Large cookies bake for 12 minutes, remove from oven, and lightly press 5 Rolo halves on the tops. Return to oven for 2 minutes.
- FYI: If you add the Rolos before mostly baking the cookies, the Rolos will melt all over, and the gooey caramel centers burn.
- Allow baked cookies to cool for 5 minutes before drizzling caramel sauce on the tops.
- I highly recommend eating some of these warm. They're good, well they're cooled too, but the warm ones are the best!
- Cool completely before packing in an airtight container and store at room temperature. I cooled mine right on the pan instead of a cooling rack.
- You can reheat the cookies in the microwave for 10 seconds or so to enjoy these warm again!
Recipe FAQs
Adding the rolos before the cookies are mostly baked causes the rolos to melt out of the cookies and the caramel centers to burn. We just want them in the oven long enough to get melty.

Ingredients
- 1 Cup Butter
- 2 Cups Brown Sugar
- 4 Eggs
- 2 teaspoon Vanilla
- 1 teaspoon Salt
- 3 teaspoon Baking Powder
- 3 Cups Quick Cooking Oatmeal
- 3 Cups Flour
- 11.5 oz Ghirardelli Milk Chocolate Chips 11.5 oz Bag
- 1 Cup Caramel Sauce your favorite, find my Caramel Sauce Recipe Here
- 15.2 oz Unwrapped Rolos 2 x 7.6 oz Bags
Instructions
- Preheat the oven to 350 degrees.
- Line baking sheets with parchment paper.
- Cut the Rolos in half and set aside.
- In a large mixing bowl, cream the butter and the brown sugar.
- Add the eggs and vanilla.
- Add the salt and baking powder.
- Mix in the quick oatmeal.
- Mix in half the flour.
- Add the chocolate chips.
- Add the remaining half of the flour.
- For smaller cookies, scoop the dough out by heaping โ cupfuls.
- For large cookies, like at Crumbl, scoop the dough out by โ cupsful.
- Roll each dough glob into a ball with lightly floured hands.
- Bake smaller-sized cookiesย at 350 degrees for 10 minutes.
- Remove from oven and place 3 Rolos halves on the top of the hot cookies.
- Place the pan back in the oven for 2 minutes.
- Cool for 5 minutes on a wire rack, then drizzle with caramel sauce.
- Bake large cookiesย at 350 degrees for 12 minutes.
- Remove from oven and place 5 Rolo halves on top of the hot cookies.
- Place the pan back in the oven for 2 minutes.
- Cool for 5 minutes on a wire rack, then drizzle with caramel sauce.
Notes
- If you can't find Rolos, the caramel-filled Hershey kisses will also work.ย They are stickier than Rolos, but they work.
- Specifically, Ghirardelli milk chocolate chips are needed for this recipe.ย They are larger than the average chocolate chip and have a slightly different taste.ย
