Preheat the oven to 350 degrees.
Line baking sheets with parchment paper.
Cut the Rolos in half and set aside.
In a large mixing bowl, cream the butter and the brown sugar.
Add the eggs and vanilla.
Add the salt and baking powder.
Mix in the quick oatmeal.
Mix in half the flour.
Add the chocolate chips.
Add the remaining half of the flour.
For smaller cookies, scoop the dough out by heaping ⅛ cupfuls.
For large cookies, like at Crumbl, scoop the dough out by ⅓ cupsful.
Roll each dough glob into a ball with lightly floured hands.
Bake smaller-sized cookies at 350 degrees for 10 minutes.
Remove from oven and place 3 Rolos halves on the top of the hot cookies.
Place the pan back in the oven for 2 minutes.
Cool for 5 minutes on a wire rack, then drizzle with caramel sauce.
Bake large cookies at 350 degrees for 12 minutes.
Remove from oven and place 5 Rolo halves on top of the hot cookies.
Place the pan back in the oven for 2 minutes.
Cool for 5 minutes on a wire rack, then drizzle with caramel sauce.
