Cheesy Honey Mustard Chicken with Bacon

This easy recipe combines the mouth watering flavors of honey mustard marinade, tender chicken, crispy bacon, sautéed mushrooms and fresh green onions! This meal has something for the whole family…even those picky eaters!

Why You'll Love This Recipe

  • This is an easy chicken recipe that's a family favorite here!
  • Even though I generally make these into chicken bites, you can cook this dish as full chicken pieces or even grill the chicken! I'll tell you how below!
  • All you need for this to be a complete meal is a green salad!

Ingredient Notes and Substitutions

  • Olive Oil - Coconut oil, canola oil or other cooking oils may be substituted.
  • Bacon - pre-cooked bacon pieces can be substituted in a pinch. It's easiest to slice bacon into pieces when it's slightly frozen.
  • Spicy Brown Mustard - Dijon mustard may also be used, yellow mustard is not a recommended substitution. See here for more info on different types of mustard.
  • Chicken - you may use boneless skinless chicken breasts, chicken breast tenderloins or skinless boneless chicken thighs. The only cut of chicken that you can't use are chicken legs.
  • Cheese - cheddar or Colby jack work great!
  • Lemon Juice - fresh is best! See here about how to juice a lemon without a juicer!

How To Make Step by Step Recipe Instructions

  • In a small bowl, or my preference, a two cup glass measuring cup, whisk together the honey, spicy brown mustard, olive oil and lemon juice.
  • Reserve ⅓ cup of the honey mustard and set it aside.
  • Cut the boneless skinless chicken into bite sized pieces and place them in a gallon sized ziploc bag.
  • Pour the remaining honey mustard sauce over the chicken pieces.
  • Zip the bag shut and squish around to distribute the sauce.
  • Place in the fridge and let marinate at least 2 hours but it can be all day which is helpful if you're making this on busy weeknights.

  • Even though you brown, crisp and sauté' the ingredients in a skillet you'll finish it off in a baking dish in the oven so preheat your oven to 375 degrees.
  • Spray a 9x13 baking dish with non-stick cooking spray and set it aside.
  • Slice the bacon into pieces, slice up the mushrooms if necessary and grate the cheese. Set these aside.
  • Take the marinated chicken from the fridge and drain the marinade off the chicken.
  • I just open a small end of the ziploc zipper and squeeze the marinade out of the bag and down the kitchen sink drain.
  • Heat a large frying pan over medium high heat until hot.
  • Drizzle in a couple tablespoons of olive oil.
  • Add the chicken pieces to the hot pan. You don't want to crowd the pan so you may need to do this step in two batches.
  • Cook chicken until it's browned on all sides and dump it into the prepared baking dish.
  • Use a spatula or something to evenly distribute it in the the dish.
  • Drizzle the reserved honey mustard sauce over them pieces.
  • Place the frying pan back on the stovetop, add the sliced bacon and cook until crispy.
  • Drain the bacon and sprinkle evenly over the chicken.

  • Return the frying pan to the heat again.
  • Drizzle in a little olive oil and add the mushroom slices.
  • Sauté' until they are half cooked.
  • Sprinkle the mushrooms over the layer bacon.
  • Sprinkle the grated cheese over the mushrooms.
  • Put the baking dish in the oven and bake for 25 minutes at 375 degrees.
  • When done, allow this chicken dinner to cool for 10 minutes before sprinkling with green onions and serving.

Recipe FAQs

How can I make this with full chicken breast?

If you don't want to make this recipe as chicken bites make as instructed except you will want to marinate the meat all day in the honey mustard sauce. Brown the chicken on both sides and place in the baking dish and do the rest of the recipe as instructed. You'll need to decrease the baking temp to 350 and plan to bake for 45 minutes.

For grilled honey mustard chicken do the following:

Marinade full chicken breasts or thighs all day. Remove from the marinade and grill over medium to medium high heat until cooked through. Place grilled chicken in a baking dish, drizzle with reserved marinade and top with crispy bacon, sautéed mushrooms and grated cheese. Place until the broiler in the oven for just a minute to melt the cheese. Sprinkle with green onions and serve!

Try these Green Beans! Or even some Smashed Potatoes! A green salad or Rice Pilaf would be delicious too!

Ingredients

  • 6 Boneless Skinless Chicken Breasts cuts into bite sized pieces
  • 1 gallon size Ziploc Bag
