A great way to cool off this summer! Homemade ice cream sandwiches are made with the ice cream of your choice for a deliciously personalized experience!
Most of us are serious ice cream eaters at my house. So I end up with 3 to 4 different kinds of mostly eaten ice cream in the freezer at all times. Making ice cream sandwiches is how I use up that last bit of ice cream in the bottom of the container that seems to have been forgotten about. I also like that you can use pretty much any kind of ice cream. Ice cream sandwiches don't really come in a lot of flavors at the store and if your kids are anything like mine, they all want a different flavor. This is my simple solution. I rolled some of the ice cream sandwiches through nut topping for ice cream. You could easily roll them through sprinkles, or oreo crumbs or anything else you can think of as well.
I don't like the ice cream sandwiches to be too large. I use about ½ a tablespoon of cookie dough per cookie. The cookies end up being 2 to 2 ½ inches in diameter.
After I've baked and cooled the cookies, I put them in the fridge for a half hour. Chilled cookies work a little bit better when I'm squishing ice cream in between them. Working quickly, I use about 2 tablespoons of softened ice cream per ice cream sandwich and top with another cookie.
Roll the ice cream sandwiches through nuts or sprinkles if you want to. I usually have some sort of container in my freezer already so that I can put in the ice cream sandwiches back in the freezer almost as I go. I make 3 or 4 and put them in the freezer before I start more so they don't get too melty. After the ice cream sandwiches are frozen, I take them back out and wrap them individually with saran wrap.

Ingredients
- 1 box Chocolate Cake Mix
- 2 Eggs
- 6 Tbs. Butter, softened
- 1 quart Any Flavor Ice Cream (you'll only use roughly ½)
- Nuts or Sprinkles (optional)
Instructions
- Preheat the oven to 350 degrees. Either spray a baking sheet well with a non-stick cooking spray or line with parchment.
- Mix together the cake mix, butter, and eggs. Drop by ½ tablespoons on prepared baking sheets and bake for 8 minutes.
- Cool on a wire rack and then place cookies in the fridge for a half hour.
- Let the ice cream soften. Scoop about 2 Tbs. of softened ice cream on half the cookies and top them with the other half. This works best if you do this step in batches of 3 or 4 at a time placing them in the freezer as you go.
- After ice cream sandwiches are frozen, wrap them individually with saran wrap. Store in the freezer.
