Homemade Ice Cream Sandwiches

Ingredients

  • 1 box Chocolate Cake Mix
  • 2 Eggs
  • 6 Tbs. Butter softened
  • 1 quart Any Flavor Ice Cream you'll only use roughly ½
  • Nuts or Sprinkles optional

Instructions

  • Preheat the oven to 350 degrees. Either spray a baking sheet well with a non-stick cooking spray or line with parchment.
  • Mix together the cake mix, butter, and eggs. Drop by ½ tablespoons on prepared baking sheets and bake for 8 minutes.
  • Cool on a wire rack, and then place cookies in the fridge for a half hour.
  • Let the ice cream soften. Scoop about 2 Tbs. of softened ice cream on half the cookies and top them with the other half. This works best if you do this step in batches of 3 or 4 at a time, placing them in the freezer as you go.
  • After ice cream sandwiches are frozen, wrap them individually with saran wrap. Store in the freezer.
