No Peanut Butter! No Coconut! Just moist chocolate no bake cookies to help you beat the summer heat! These cookies will disappear as fast as you make them!
I hope you all don’t mind the more frequent than usual recipe updates. Summers are crazy!!! I will probably update several of my older recipes and re post them in addition to sharing new recipes throughout the summer. I thought these no-bake cookies would be perfect for today. The temperatures outside continue to climb making it hard to want to turn the oven on and heat up the house. Not everyone likes the usual no bake cookies at my house because of the peanut butter in them. So I usually make two kinds of no bake cookies. The regulars with peanut butter and some just plain chocolate ones. They have no peanut butter in them. They also do not have coconut in them as do most non-peanut butter no bake cookies. These are chocolatey and moist and I do not have to heat up my house with the oven to get them.
No bake cookies are pretty straight forward. Put the sugar, cocoa, butter and milk in a medium pot. Bring to a boil and let it boil for 2 minutes. Remove from heat and stir in the vanilla, salt, and vegetable oil. Stir in the oatmeal and let it stand for 5 minutes.
Drop by 2 Tbs. size scoops onto wax paper to cool. Once they are set, eat them!
Makes 3 dozen
- 2 Cups Sugar
- 1/4 Cup Cocoa Powder
- 1/2 Cup Butter 1 Stick
- 1/2 Cup Milk
- 1 tsp Vanilla
- 1/2 tsp Salt
- 2 Tbs. +1 tsp Vegetable or Canola Oil
- 3 Cups quick cooking Oatmeal
Put the sugar, cocoa, butter and milk in a medium pot. Bring to a boil and let bowl for 2 minutes. Remove from heat. Stir in the vanilla, salt, and vegetable oil. Stir in the oatmeal and let stand for 5 minutes. Scoop out by 2 Tbs. size scoops and put them on wax paper. Cool completely and eat!
