Ingredient Notes and Substitutions
- Carrot Cake Mix - In some areas this flavor cake mix is seasonal. Spice cake mix can be substituted.
- Butter - I used salted butter but unsalted butter may be used as well. I don't recommend subbing canola oil or olive oil for the butter.

Step by Step Instructions
- Preheat the oven to 350 degrees and line baking sheets with parchment paper or spray with non-stick cooking spray.
- Mix together the cake mix, butter and eggs until well combined.
- Scoop out by ½ tablespoonfuls onto the prepared baking sheets. I can usually get 20 to a pan.
- Bake at 350 for 7-8 minutes.
- Cool on a wire rack.
- Make the cream cheese frosting while your cookies bake.
- Beat the cream cheese and butter together until no lumps remain.
- Add the vanilla and powdered sugar.
- Beat until completely smooth.
- Set aside until cookies are ready to frost.
- When cooled frost one cookie with the cream cheese frosting then top with another.
- Store cookies in the fridge.
Recipe FAQs and Expert Tips
I find the orange color of the baked cookies depends on the batch of the cake mixes from the company. Sometimes they are a brilliant orange and other times they're not. Doesn't depend on how fresh the cake mix either.
They should be good for a week in the fridge. Mine have never made it more than a couple days without being completely devoured though.
