- Preheat your oven to 350 degrees.
- Spray a loaf pan with non-stick cooking spray or line it with parchment paper for easily lifting the loaf out when it's cool.
- Peel, core, slice, and dice a large apple. Set aside.
- NOTE - For best results, diced apples are best as shredded apples tend to just become a part of the bread instead of having sweet apple chunks throughout the loaf.
- In a large bowl, cream the butter, olive oil, and sugar.
- Add the eggs.
- Beat in the vanilla extract and applesauce.
- Beat in the ground cinnamon, baking soda, baking powder, salt, and half the flour.
- Hand mix in the last half of the flour with the chopped apples and crunchy walnuts using a wooden spoon.
- Scrape down the sides of the bowl.
- Pour batter into the prepared loaf pan and spread it into an even layer.
- Bake at 350 degrees, in the center of the oven, for 30 minutes, then cover the bread with a piece of tin foil to avoid over-browning.
- Continue to bake for another 20 minutes.
- Cool the bread on a wire rack for 20 minutes before removing it from the bread pan.
- Store cooled bread in a loosely covered container or loosely covered with plastic wrap on a cutting board.
