Leftover turkey from Thanksgiving? No problem! Try a turkey reuben! You’ll love this delicious twist on a classic sandwich!

Turkey Reuben

This is the first of the Thanksgiving leftover recipes I’m going to share.  This one is my husband’s favorite.  It is the one he looks forward to every Thanksgiving. Turkey reubens are also really quick and easy to make.   Serve them with some giant pickles and it will be just like having a deli at home!

Turkey Reuben ingredients.

This is all you need to make these Turkey Reubens.  Just leftover turkey, pumpernickel or rye bread, swiss cheese, sauerkraut, and thousand island dressing.   I recommend toasting the pumpernickel or rye bread slices before making the sandwich to prevent sogginess.  Spread both sides of the toasted bread with the thousand island dressing.  On one side of the sandwich place some turkey. I like to break it up just with my fingers so that the turkey is somewhat shredded.  Top the turkey with a slice of swiss cheese and place under a broiler for about 30 seconds or until the cheese is melted.  Put the desired amount of sauerkraut of the other side of the sandwich.  Top the turkey/cheese side of the sandwich with the sauerkraut side and enjoy!

Ingredients

  • The amounts of the ingredients you will need depends on how many sandwiches you plan to make. Adjust amounts of ingredients to fit your needs.
  • Pumpernickel or Rye Bread
  • Sauerkraut
  • Slices Swiss Cheese
  • Thousand Island Dressing
  • Leftover Thanksgiving Turkey

Instructions

  1. Toast the bread to prevent sogginess.
  2. Spread each side of the sandwich with thousand island dressing
  3. Break up the turkey a bit with your fingers and layer evenly on one side of the sandwich. Top with the swiss cheese and place under a broiler for 30 seconds or until the cheese is melted.
  4. Put some sauerkraut on the other side of the sandwich.
  5. Top the turkey/cheese side of the sandwich with the sauerkraut side.
  6. Enjoy!
