Morning Glory Muffins

Wake up with these Morning Glory Muffins! They're loaded with pineapple, carrots, raisins, nuts, and other delicious things!

Quick bread and muffin recipes are my favorite! This Morning Glory Muffin recipe is a little different than the muffin recipes that I currently have.

These are dense, hearty muffins that are packed with raisins (unless you don't want raisins), pineapple, carrots, nuts, and applesauce.

I think they fall somewhere in between a zucchini/banana bread and a carrot cake. They're super delicious, not too sweet, and freeze really well!

What are Morning Glory muffins?

They are a dense muffin. They have more of a zucchini or banana bread texture. They are also full of grated carrots, pineapple, sometimes apple pieces, coconut, nuts, raisins, dates, or other similar ingredients.

How to make Morning Glory muffins:

  1. Preheat your oven to 350 degrees and line 18-20 muffin cups with liners.
  2. Cream the butter and sugar.
  3. Add the eggs, vanilla, and applesauce.
  4. Beat in the cinnamon, baking powder, baking soda, salt, and 1 cup of flour.
  5. Mix the carrots, pineapple, nuts, and raisins in by hand with the last cup of flour.
  6. Divide the batter among the muffin liners filling each nearly to the top.
  7. Bake in your preheated oven (350 degrees) for 15-20 minutes.
  8. A toothpick should come out clean.

Can you freeze these muffins?

Yes, once they are completely cool, wrap them tightly with saran wrap and put them in an airtight container. Pop them in the freezer. Thaw at room temperature.

Ingredients
  

  • ยฝ Cup Butter
  • 1 Cup Sugar
  • 2 Eggs
  • 1 teaspoon Vanilla
  • ยพ Cup Applesauce unsweetened, no added cinnamon
  • 1 ยฝ Cups Grated Carrots
  • 8 oz Well Drained Crushed Pineapple
  • 1 Cup Pecans, Walnuts or Almonds chopped
  • 1 Cup Raisins golden or regular
  • 2 teaspoon Ground Cinnamon
  • 1 teaspoon Baking Powder
  • 1 teaspoon Baking Soda
  • 1 teaspoon Salt
  • 2 Cup Flour

Instructions
 

  • Preheat your oven to 350 degrees.ย  Line 18-20 muffin cups with liners.
