Wake up with these Morning Glory Muffins! They're loaded with pineapple, carrots, raisins, nuts and other delicious things!

Quick bread and muffin recipes are my favorite!  This Morning Glory Muffin recipe is a little different than the muffin recipes that I currently have.  These are a dense, hearty muffins that are packed with raisins (unless you don't want raisins), pineapple, carrots, nuts and applesauce.  I think they fall somewhere in between a zucchini/banana bread and a carrot cake.  They're super delicious, not too sweet and freeze really well!

What are morning glory muffins?

They are a dense muffin.  They have more of a zucchini or banana bread texture.  They are also full of grated carrots, pineapple, sometimes apple pieces, coconut, nuts, raisins, dates or other similar ingredients.  

How to make morning glory muffins:

  1. Preheat your oven to 350 degrees and line 18-20 muffins cups with liners.
  2. Cream the butter and sugar.
  3. Add the eggs, vanilla and applesauce.
  4. Beat in the cinnamon, baking powder, baking soda, salt and 1 cup of the flour.
  5. Mix the carrots, pineapple, nuts and raisins in by hand with the last cup of flour.
  6. Divide the batter among the muffin liners filling each nearly to the top.
  7. Bake in your preheated oven (350 degrees) for 15-20 minutes.
  8. A toothpick should come out clean.

Can you freeze these muffins?

Yes, once they are completely cool wrap them tightly with saran wrap and put them in an airtight container.  Pop them in the freezer.  Thaw at room temperature.

Ingredients

Units Scale
  • ½ cup Butter
  • 1 cup Sugar
  • 2 Eggs
  • 1 tsp Vanilla
  • ¾ cup Applesauce, unsweetened, no added cinnamon
  • 1 ½ cups Grated Carrots
  • 8 oz Well Drained Crushed Pineapple
  • 1 cup Chopped Pecans, Walnuts or Almonds
  • 1 cup Raisins, golden or regular
  • 2 tsp Ground Cinnamon
  • 1 tsp Baking Powder
  • 1 tsp Baking Soda
  • 1 tsp Salt
  • 2 cups of Flour

Instructions

  1. Preheat your oven to 350 degrees.  Line 18-20 muffins cups with liners.
