Simple Salty Cucumbers

These salty cucumbers are seriously so ridiculously simple to make that I hesitated to post them.  However, they are a popular favorite and everyone wanted an easy place to find the amounts of cucumbers and salt to use. Don't let the simplicity fool you! These totally addicting cucumbers with salt are crispy, salty and made without vinegar and oil!

 Now if you are thinking these are the run of mill vinegar soaked cucumbers you are wrong.  This recipe contains no vinegar.  Nor is there any oil.  I've never been big on the vinegary, oily cucumbers that are found at potlucks and barbecues.  I prefer just a light salty flavor.  That is exactly what you will get from these.  I will warn you though after looking at how plain and simple this recipe is some will think this recipe is ridiculous and cast it aside.  Trust me, though simple these are delicious.

Ingredient Notes

  • Salt - You can use kosher salt, sea salt, table salt...pretty much any kind of salt!
  • Green Onions - The green onions are optional. You can substitute red onions or garlic cloves for them however.
  • Fresh Cucumbers - There are so many kinds especially at a good farmers market or some grocery stores! English cucumber, kirby cucumbers, Japanese cucumbers, seedless cucumbers, garden cucumbers, etc... The long crunchy varieties work best. To learn more read about Types of Cucumbers here if you're not sure what kind of cucumbers to choose.

Couple Things You'll Need

Step by Step

  • Rinse 2-3 large cucumbers under cold water and dry with paper towels.
  • Peel and slice cucumbers into thin slices.
  • Chop the green onions.
  • Put the cucumber slices and chopped green onions in a bowl.
  • Whisk 3 teaspoon of salt into 2 Cups of water until dissolved.
  • Pour the salt water over the sliced cucumbers.
  • NOTE -  If you find there's not enough water to cover the cucumbers just know that the amount of salt to water is 1 ½ teaspoon salt per cup of water.  So if you need a little bit more salt water you can easily add more.
  • Cover the bowl with plastic wrap or with lid and place it in the fridge. 
  • Refrigerate for 6 hours or overnight (I personally prefer these the next day)

Pour the salt water over the raw cucumbers.

Many people not only do not like vinegar, some can't have vinegar due to digestive issues or food sensitivities.

  • 2 cups Water
  • 2-3 large Cucumbers

Notes

  • Since cucumber sizes vary just know that you need enough salt water to cover all the cucumber slices.  If you don't have enough water just know that the amount of salt to water is 1 ½ teaspoon salt  per cup of water.  So if you need a bit more salt water you can easily add more.

    Perfectly delicious! What is better than home grown cucumbers, a few little green onions and a little salt? I also like to dip them in a bit of sour cream. Can’t have just one!
