Looking for a fun side dish for St. Patrick’s day? Try this pistachio salad!
So, funny story. I received an email from one of my cousins asking if I had a recipe for pistachio salad. I was immediately suspicious and paranoid because I’ve never gotten an email from this cousin before and I found his email address to be, well, a little odd. So surely some scammer is trying to steal all my personal information and rob me blind through the guise of wanting a pistachio salad recipe, right? Well….no, not really. It turned out to actually be my cousin and I did share this recipe with him. After this little adventure I could not stop thinking about this salad. So I had to make it, too. It is a super simple dump and mix type recipe. It has a mild, sweet flavor that’s not overpowering and is absolutely delicious. I really like the green color, too. It is so pretty and it went well with our grilled chicken last night. So if you’re in the mood for something easy and out of the norm, pistachio salad is something you should definitely try!
This could not be more easy. I dumped all the ingredients in the bowl and….
…..stirred it up. The only ingredient not pictured above is the marshmallows because, well, I forgot to put them in at that point. Oops! After you mix the ingredients together. Cover and refrigerate for a couple hours. That’s it!

- 1 (3.4 oz) pkg. Pistachio Instant Pudding Mix
- 1 (8 oz) container Cool Whip
- 1/2 Cup Sour Cream
- 2 (8 oz) cans Crushed Pineapple undrained
- 1 1/2 Cups Mini Marshmallows
In a large bowl mix all the above ingredients together. Cover and refrigerate for 2 hours.
Note: You do not need to drain the pineapple. Just open and dump it in.
