Breakfast honey bread is a simple, quick bread with a delicious honey butter flavor sure to help you start your day on the right foot!
We are not really into cold cereal at my house. Sure there are some we like and we eat it a couple times a week, but that's about it. So for the most part I cook breakfast. This breakfast honey bread is one I grew up with. My Mom has an old Winnie the Pooh cookbook that has many Winnie the Pooh inspired recipes. This is one of them. I've tweaked it just slightly though. This is not a super sweet bread and has a more of a muffin texture to it. The best part about this honey bread is that it is really fast to mix up and bake which is a plus when you are trying to get kids ready to go in the morning. We like it hot from the oven slathered in butter, but my kids like it cold for an after school snack, too.
As always, preheat your oven and prepare you baking pan. In a large bowl, whisk the dry ingredients together and set it aside. Then in a microwavable bowl or measuring cup heat the butter and honey until the butter is nearly melted. Whisk the butter and honey together to finish melting the butter. I only heat it until the butter is nearly melted because I don't want the honey butter so hot that it cooks my eggs when I add them. Whisk the milk into the honey butter to cool it slightly and then whisk in the eggs. Pour this into the dry ingredients and mix just until combined.
Spread into your prepared 9x13 pan. This is a stiffer batter so it takes a little bit of effort to spread it out evenly. Bake at 400 degrees for 15 to 18 minutes. I needed to tent mine with a little bit of foil for the last 7 or so minutes to prevent it from over browning. When the honey bread is done a toothpick should come out come. Eat it hot with honey and butter or cool it and have it as a snack later.

- 3 Cups Flour
- ½ Cup Sugar
- 1 tsp Salt
- 5 tsp Baking Powder
- ½ Cup Butter
- 6 Tbs Honey
- ½ Cup Milk
- 2 Large Eggs
Instructions
- Preheat the oven to 400 degrees. Spray a 9 x 13 pan with non-stick cooking spray.
- In a large bowl, whisk together the flour, baking powder, salt, and sugar. Set aside.
- In a microwave safe bowl or measuring cup heat the butter and the honey in the microwave until the butter is nearly melted. Whisk until the butter and honey are fully combined. Whisk in the milk, then the eggs.
- Pour the butter/honey mixture into the dry ingredients in the bowl. Mix just until moistened. Spread the batter into the prepared pan and bake for 15 to 18 minutes. You may need to tent honey bread with tin foil for the last 7 or 8 minutes to avoid over browning. Honey bread will be golden brown when done and a toothpick will come out clean.
