Ingredient Notes
- Dark Chocolate - The kind of chocolate I highly recommend using Ghirardelli dark chocolate melting wafers or another good quality chocolate brand. You can substitute dark chocolate chips if you choose.
- Milk Chocolate - While I typically use the Ghirardelli milk chocolate melting wafers, milk chocolate chips work fine as a substitute here.
- White Chocolate - You can use white chocolate chips, but they don't set up with the distinct white color I want, so I use melting wafers or candy melts.
- Strawberries - Always fresh strawberries. Frozen strawberries are a big no.

How to Make
- Start by rinsing your strawberries under cold water, making sure there's no dirt stuck to them or the green leaves.
- Line the strawberries out on paper towels and use another paper towel to pat the strawberries and the green tops completely dry.
- Remove any strawberries that may be moldy or ones that are so ripe they're no longer firm but squishy.
- TIP- It's very, very, very important for the strawberries to be 100% dry before dipping them in the melted chocolate. If there are wet spots on the strawberries, the chocolate won't stick to the berries.
- Line a cookie sheet or baking sheet with wax paper or parchment paper.

- I always use a 2:1 ratio, dark chocolate to milk chocolate, for chocolate dipped anything.
- So melt one 10 oz bag of dark chocolate wafers with 5 oz (half a 10 oz bag) milk chocolate wafers stirring as they melt.
- TIP - If using chocolate chips, 10z is 1+ยฝ Cup dark chocolate chips. 5 oz is ยพ cup milk chocolate chips.
- Once the chocolate is melted, hold a strawberry firmly by the leaves and dip it in the melted chocolate mixture to coat nearly to the green leaves.
- Let the excess chocolate drip back into the melting pot.
- Line the chocolate-dipped strawberries in a single layer on the wax paper-lined sheet pan to set up.
- Melt the white chocolate in a small microwavable container.
- Spoon the melted white chocolate into a piping bag.
- Snip the end off just a little.
- Drizzle the melted white chocolate over the strawberries.
- Allow the chocolate to fully set up solid at room temperature before serving.
- Store in the fridge in a loosely covered container instead of an airtight container to avoid too much moisture being trapped in the container.

No, mine are cold when I pull them out of the fridge, but by the time I wash and dry them, they're room temperature. It's never been a problem.
Yes, just melt white chocolate melting wafers instead of regular chocolate and dip them the same way. I would choose a higher quality white chocolate than white chocolate chips, however. Melting wafers are a better choice here.
