Hey Cheesecake lovers! Check out these easy peasy, chocolaty, rich, easy-to-take and share chocolate crumble cheesecake bars!!!
I love a good cheesecake, but I don't always have the time to bake a full-size cheesecake. These chocolate crumble cheesecake bars are great! Easy to make, rich cheesecake filling, and a chocolate crust! They cut up really nicely, too, making them a great dessert to take and share at parties, gatherings, and whatnot. You can even cut the squares much smaller to serve them as little cheesecake bites if you want!
This is a graham cracker crust that we are going to make chocolate.ย I like to use the boxes of graham cracker crumbs, but you can crush your own.ย To get 2 cups of crumbs, you will need 2-3 packages of graham crackers.ย
Melt the chocolate chips and butter, then mix with the graham crackers crumbs. You are going to wonder if you have even chocolate to incorporate into the crumbs, but you will.ย You just have to work at it a bit.ย Reserve a ยฝย cup of chocolate crumbs for the topping. Press the remaining chocolate crumbs in a 9x13 pan lined with parchment paper or foil.ย ย
Whip up the cheesecake filling and pour it over the chocolate crust.
Sprinkle the reserved chocolate crumbs over the cheesecake filling. Bake in an oven that's been preheated to 325 degrees for 25-30 minutes. The edges should just be starting to turn golden, and the filling should be set. Cool completely and chill for 4 hours before cutting.

Chocolate Crumble Cheesecake Bars Recipe
Ingredients
- 2 Cups Chocolate Chips
- ยฝ Cup Butter
- 2 Cups Graham Cracker Crumbs
- 8 oz Cream Cheese softened
- 14 oz Sweetened Condensed Milk
- 1 Egg
- 1 teaspoon Vanilla
Instructions
- Preheat your oven to 325 degrees and line a 9x13 pan with parchment paper or foil if you desire.
- Melt the chocolate chips and butter.ย Once melted and smooth, mix into the graham cracker crumbs until they come together in a crumbly mixture.
- Reserve a ยฝ cup of chocolate crumbs and press the rest into the prepared pan.
- Beat the cream cheese-sweetened condensed milk until smooth.ย Add the egg and vanilla, beating them just until combined.
- Pour the filling over the crust and sprinkle the reserved crumbs over the filling.
- Bake at 325 degrees for 25-30 minutes.ย The edges should just barely be starting to brown, and the filling set.
- Cool completely, then chill for 4 hours before cutting and serving.
