Caramel Krispy Treats Recipe

Take your rice krispie treats to a whole new level! This no-bake recipe is to die for! This easy recipe is made without marshmallows. The simple caramel sauce means there's no unwrapping and melting caramels, either! Individual portions make them easy to share as well!

Ingredients

  • 2 Cups Brown Sugar
  • 1 Cup Butter
  • 1 Cup Light Corn Syrup
  • 14 oz Sweetened Condensed Milk can of 14 oz.
  • 13 oz Rice Krispies one 13 oz box

Instructions

  • Measure the rice krispies into a large bowl and set aside.
  • Measure the butter, brown sugar, and corn syrup into a medium pot and place over medium heat on the stovetop.
  • Once the butter is melted, the contents in the pot are mixed together and begin to boil; turn down the heat to medium-low heat and boil the caramel for 3 minutes. This will slightly thicken the sauce while the sugar dissolves.
  • Remove the pot from the heat and immediately whisk in the can of sweetened condensed milk.
  • Pour the hot caramel over the Krispies in the large bowl.
  • Mix to coat the rice cereal pieces well. I recommend using a silicone spatula instead of a wooden spoon because the silicone is non-stick and makes clean-up easier.
  • Let the caramel krispie mixture stand for 5 minutes.
  • Lay a long piece of parchment paper or wax paper across your countertop.
  • Spray the inside of a ⅛ cup measuring cup with non-stick spray.
  • Scoop the Krispy treats out, slightly packing the mixture into the measuring cup, and turn them out onto the parchment paper to finish cooling at room temperature.
  • Unlike a traditional rice krispie treat, you don't want to store these in an air-tight container. The moisture from the sugars will turn them soggy pretty quickly. It's best to store this dessert recipe in a loosely covered container with wax paper between layers. A little air flow will keep them from getting too moist.

Notes

  • Name-brand Rice Krispies are best.  Off-brands tend to become soggy.
  • For salted caramel rice krispie treats, sprinkle the tops with flaky sea salt before the caramel sets.
  • For chocolate caramel rice krispie treats, warm dark or white chocolate and drizzle it over the tops of the cooled treats.
