Fudgy Peanut Butter Brownies Recipe

These brownies with peanut butter filling topped with rich chocolate ganache are to die for!  This easy recipe is perfect for potlucks and neighborhood barbecues!  No one will guess these chocolate peanut butter brownies are dressed-up box mixes!

Ingredients

  • 1 package Brownie Mix for a 9x13 pan of Brownies plus the ingredients called for on the box

Peanut Butter Layer

  • 1 Cup Butter softened
  • Cup Creamy Peanut Butter
  • ¼ Cup Instant Vanilla Pudding Mix
  • ¼ Cup Milk
  • 3 Cups Powdered Sugar

Chocolate Ganache

  • 1 Cup Heavy Whipping Cream
  • 2 Cups Chocolate Chips

Instructions

  • Prepare brownies according to package instructions in a 9x13 pan.  
  • Cool completely before moving to the next step.
  • Beat the butter and peanut butter until well mixed.
  • Add the pudding mix, milk, and powdered sugar.  Beat until smooth.
  • Spread over the top of the cooled brownies and place in the fridge to chill.
  • Measure the chocolate chips into a microwavable bowl and pour the heavy cream over the top.
  • Heat in the microwave carefully, in increments, until the melted chocolate mixture is perfectly smooth.
  • Spread the chocolate ganache evenly over the delicious peanut butter filling layer.
  • Put the dessert back in the fridge and chill for at least 4 hours.
  • Cut into squares using a sharp knife.
  • Running the knife under hot water and quickly but carefully drying it between cuts makes clean cuts.
  • Store in the fridge in an airtight container.

Notes

  • Peanut Butter - You'll want to use creamy peanut butter for this recipe. Crunchy peanut butter doesn't work well. Natural peanut butter is fine.
  • Brownie Mix - Use your favorite mix that makes a 9x13 pan of chewy brownies. You'll be following the instructions and ingredients required on the box to prepare them. Trust me, no one will know that these aren't really "homemade" fudgy brownies.
  • Chocolate Chips - Whether you use milk chocolate chips or semi-sweet chocolate chips is up to you. Semisweet chips do cause the chocolate ganache to set up firmer, which I think is a plus.
