Banana Oatmeal Muffins Recipe

- ½ Cup Butter
- 1 Cup Sugar
- 2 Eggs
- 1 teaspoon Vanilla Extract
- ¼ Cup Milk
- 1 teaspoon Baking Soda
- ½ teaspoon Salt
- ½ teaspoon Ground Cinnamon
- 1 ½ Cups Mashed Bananas (about 4 bananas)
- 1 Cup Quick Cooking Oatmeal
- 1 ¼ Cups Flour
Preheat the oven to 350 degrees.
Line a cupcake pan with muffin liners. Set aside.
Cream the butter and sugar together.
Beat in the eggs, vanilla, and milk.
Beat in the baking soda, salt, and ground cinnamon.
Mash the bananas.
Add the mashed bananas, oatmeal, and ⅔s of the flour.
Stir in the last of the flour to avoid over-mixing.
Fill muffin cups ⅔ full.
Bake at 350 degrees for 15- 18 minutes until a toothpick comes out with moist crumbs and the tops are lightly browned.
- Use bananas that are too ripe to eat but not mostly brown mushy ones.
