Soft Pretzel Bites

Ingredients

  • 1 Tbs. Active Dry Yeast
  • 2 Tbs. Brown Sugar
  • 1 ½ Cup Warm Water
  • 1 teaspoon Salt
  • 3 Cups All Purpose Flour
  • 1 Cup Bread Flour
  • 5 Cups Water
  • 2 Tbs. Baking Soda
  • ¼ Cup Butter Melted
  • Coarse Kosher Salt

Instructions

  • In a mixing bowl or a stand mixer fitted with a dough hook, dissolve the yeast and brown sugar in 1 ½ Cups of Warm Water.  Let stand for 5 minutes.
  • Add the salt, all-purpose flour, and bread flour.  Mix until it forms a ball of dough.  Knead until smooth and elastic.  
  • Cover and let rise in a warm place until it doubles in size.  This takes about an hour.
  • Once double in size, dump the dough out onto a very lightly floured surface.  Divide the dough into 6 pieces and roll them out like snake-like ropes that are as big around as a quarter.  Cut the ropes into bite-sized pieces.
  • Preheat the oven to 450 degrees and place parchment paper on 2 baking sheets.
  • Bring the 5 cups of water and the 2 Tbs. of Baking soda to a low simmer on the stove.
  • Using a slotted pasta spoon, simmer the pretzel bite pieces a small batch at a time just until they puff up and nearly double in size.  This doesn't take long.  Remove the pieces from the pot and shake off the excess water.  Put the pieces on the prepared baking sheets. Keep the water at a simmer.  If you allow it to boil, it will foam up like crazy!
  • Bake the soft pretzel bites at 450 degrees for 12-15 minutes.  They will be golden brown all over.  Brush the hot pretzel bites with the melted butter and sprinkle them with the coarse kosher salt.
