Ingredients

  • 4 Potatoes
  • Oil for frying
  • Salt
  • Dipping Sauces

Instructions

  • Step one: peel and cut potatoes up into fries.  I don't like mine thick.  My fries were a bit smaller than my index finger.  Place cut-up potatoes in a pot and add enough water to cover all the fries.  Allow the fries to soak for 10 minutes.
  • Heat an oil of your choice to 375 degrees. I usually use canola oil. I also use a fry daddy, which heats to the appropriate temperature on its own, which is nice.
  • Drain the potatoes and pat them mostly dry. This is important. If you dump really wet fries into hot oil, the oil can bubble too much and overflow, possibly causing a fire. So, pat the fries mostly dry.
  • Fill the fryer basket a little more than halfway, lower the fries into the oil slowly, and fry until they are golden brown. It takes me about 10 minutes. Dump finished fries out into a paper towel-lined dish and sprinkle with salt. Enjoy with dipping sauces of your choosing!
