Simple Potato Bacon Soup

Simple potato bacon soup is quick, easy and delicious. The perfect comfort food for those crazy weeknights and busy weekends!Makes 2 quarts of soup

Ingredients

  • 1 lb. Bacon
  • 2 Tbs Butter
  • ½ Cup Onions chopped
  • 1 Cup Celery chopped
  • 4 Cups Chicken Broth
  • 3 Cups Potatoes peeled & cubed small
  • 4 Cups Whole Milk, slightly warmed *see note
  • ¼-1/2 teaspoon White Pepper
  • Salt to taste

Instructions

  • Crisp and crumble the bacon.  Set aside.
  • In a soup pot, melt the butter.  Once sizzling add the onions and celery.  Cook until half done.
  • Add the chicken broth and potatoes.  Bring to a boil and boil until the potatoes are cooked through.
  • Add the slighty warmed milk, bacon and white pepper.  Bring nearly to a simmer and remove from the heat.  Don't let the soup boil after adding the milk because it will break and produce a grainy soup.
  • Add salt to taste.  Serve!

Notes

Using 2% or lower milk will result in a thinner soup.  You can use 2 cups of a lower percentage of milk and 2 cups of half and half if you would rather.
