Not gonna lie…I think my easy Salmon Piccata recipe rivals Olive Garden’s. Don’t believe me? Try this quick and easy recipe yourself!

Olive Garden is my favorite restaurant and I love recreating their dishes!  The last time my husband and I ate there he had the Salmon Piccata.  My husband really, really likes Salmon so I wanted to be able to make it for him at home minus the sun dried tomatoes and soggy zucchini.  After a couple of tries, I have to say I am really pleased with the result.   This Salmon Piccata recipe is really easy.  Seriously, you do not need to be a cooking expert to make this.  Also, it was ready to eat in 20 minutes.  Nice, right!  So try this out and let me know how you like it!

I thought that this Italian Pasta Salad was a pretty common pasta salad, but the last couple times I made this people were unfamiliar with it.  This isn’t an original recipe by any means, but I thought I’d share the way I make it.  This is one of those great pasta salads that you can add or leave out what you want and it will still taste great.  It takes very little time to prepare and is easy to make a larger or a smaller amount depending on what you need.  Plus, check out how beautifully colorful it is!!!

Need a new casserole recipe for dinner?  Check out this Chicken Cordon Bleu Pasta Bake!!!  What’s the difference between a “bake” and a “casserole”?  Nothing except one of my kids hears the word casserole and will not even try whatever it is.  If I call it a “bake” they have no problem with it.  Oiy!!! Anyway, several weeks ago went to a lunch at one of my friend’s houses.  She served this delicious Chicken Cordon Bleu Pasta!  The only thing she wished was different about it was the cheese sauce.  She said she would prefer to be able to make a homemade sauce instead of using bottled alfredo.  So I played around with the recipe and ta-da!  Here we have a delicious pasta dish with a homemade cheese sauce!  Thanks for sharing your recipe Marisa!

Are you ever in the mood for something sweet, but not too sweet?  Me, too!  These oatmeal craisin cookies will satisfy your sweet tooth without being too much.  Raisins are the more traditional oatmeal cookie mix in but I really don’t like raisins.  I do however like craisins.  I like their tart flavor.  They compliment oatmeal cookies so well too.  These cookies are soft, chewy and full of the craisin tart sweetness that I love!

Brussel Sprout Slaw!  Did you cringe at the words brussel sprout?  Brussel sprouts get such a bad rap!  I’m not gonna lie, when cooked wrong they are absolutely disgusting.  When done correctly they are really, really, delicious!  Actually, they make my favorite veggies list.  One of my new year’s resolutions is this year is to expand the types of veggie sides I serve and to think more outside the box.  We are kind of in a eating the same vegetables over and over again rut.  I saw a bag of brussel sprouts at the store and decided to see what I could come up with.  I wanted something more of a fresh salad then a cooked vegetable.  This brussel sprout slaw was a hit!  Read on and I’ll tell you more about it!
