Who doesn’t love a good chocolate chip muffin for breakfast? Or maybe an after school snack? This recipe is quick, easy and definitely a keeper. 



  • 2 Cups Flour
  • 1/2 Cup Sugar
  • 2 Tbs. Brown Sugar
  • 1 Tbs. Baking Powder
  • 1/2 tsp Salt
  • 1 Egg
  • 1 1/4 Cup Milk
  • 1/3 Cup Canola Oil
  • 2 tsp Vanilla Extract
  • 1 Cup Chocolate Chips


  1. Preheat the oven to 375 degrees.  Prepare 18 muffin cups by placing liners in them.
  2. Whisk together the flour, sugar, brown sugar, baking powder, and salt.  Make sure to squish the brown sugar lumps.
  3. Whisk together the milk, egg, oil, and vanilla.  Stir into the dry ingredients until half way incorporated.  Add the chocolate chips and stir in just until batter is mixed together.
  4. Full muffin cups 2/3’s of the way and bake at 375 degrees for 13-15 minutes.  A toothpick will come out clean.  The tops should not brown.
